Regina Flavin from Rushbrook Cobh won a gold medal and the coveted Best in Show title for her baking excellence at the recent Sodexo Salon Culinaire, the annual culinary competition run by the catering and services company for its 2,000 staff working in 200 site locations around Ireland.

Regina’s pumpkin and caramel gateau received high praise from the judges who commented on the ‘lightness of a beautifully presented cake that was delicate and flavourful’.

Regina is Sodexo’s business manager at EMC Citygate and she said, ‘There’s nine Sodexo staff on-site and together we won five medals at the Salon so I’m very proud of our result. I trained as a pastry chef and I still like to bake as a hobby. My entry was inspired by a cupcake recipe that all my friends love and I also wanted to create a modern and seasonal gateau for the restaurant’s coffee dock.”

EMC Citygate head chef Conor McAlonan from Oysterhaven in Kinsale won silver in the Chef of the Year competition. His starter was a ceviche of hake over sushi rice with a miso and foraged seaweed consommé, followed by an entree of aromatic roast guinea fowl with salad of macerated kale, pomegranate, yam and a star anise jus. Dessert was a warm terrine of chocolate tart with berry gel, bay leaf caramel and candied rose petals.

Ciara Buckley won two silvers in the Advanced Barista Challenge and the Dessert Tart Class and her colleague Rosalia Priego a bronze in the Dessert Tart class.

Their colleagues over at EMC in Ovens also won medals: head chef Adrian Nix won silver in the Mystery Basket, Marie Cunningham a gold in Design a Deli Wrap and Niamh O’Regan a gold in the Novice Barista Challenge.
